1 stick
unsalted butter - melted
1 cup
granulated sugar
1 cup
all-purpose flour
2
teaspoons baking powder
1 cup
milk
1
teaspoon vanilla extract
4 ripe
peaches
(peeled,
pitted, & thinly sliced)
1/2
teaspoon cinnamon |

Preheat
Over: 375 Degrees
Melt
butter. Pour into a 2-quart baking dish (11x7 -or-
8in.sq.)
In a
mixing bowl, combine the sugar, flour, and baking
powder. Stir to blend. Next, stir in the milk and
vanilla until blended.
Pour the
batter over the melted butter. Toss the peaches with
the 1/2
teaspoon of cinnamon. Arrange the peach slices over
the
batter. Bake for 25 to 30 minutes. Test with a
toothpick,
once
inserted into the cake, it should come out clean.
The top
of the cake will be brown, and it will softly pull
away
from the sides of the pan. Serve warm with a little
fat-free
whipped or a scoop of fat-free vanilla ice cream.
Sprinkle
lightly with cinnamon if wanted. Serves 6. |
