The Vineyard's "Living with Wine" Menu Idea....  White Noble

Caramelized Apple and

Toasted Walnut Rough Cakes

A wonderful soft dessert, this is truly something

to enjoy. We always like to do so many things with

fruit, and our winemaker is a true lover of apples and walnuts. So this was the idea that we came up with

as a relaxing summer dessert. Cheers~

Ingredients

Preparation and Design

3 tablespoons olive oil

2 tablespoons butter
1 small red apple cored and sliced
1 tablespoon granulated sugar
1/2 cup toasted chopped walnuts

12 small baby pie cakes

1 whip cream to taste

1 cinnamon container

Sauté walnuts in olive oil on medium heat for around 5 minutes. Cover with lid to keep oil slightly inside. Add apple slices, sugar, and sprinkle with cinnamon as desired. Tossing occasionally until apples are soft and golden brown. On average an additional 7-8 minutes.  Do this at a low heat not to burn the walnuts. Let apple slices cool slightly and load up the small pie cakes. Top with whip cream. May be served right away, or chill if it is to be served later. Is also great to be pared with a small amount of vanilla ice cream on the side as desired.
